Faux Tuna Salad

I’m not vegan. I’m not even vegetarian. But, I do love the energy I feel from eating more fruits, more veggies, and more whole foods!
Faux tuna salad is one of my all-time favorite recipes! You can enjoy it in a tortilla or a gluten free wrap, or you can wrap it in a collard green leaf, or enjoy it with a fork! However you eat your faux tuna salad, I certainly hope you enjoy it as much as I do!
1 can of garbanzo beans (drained)
1/3 c. vegan mayo
2 T. honey mustard
3 dill pickles (sliced)
2 carrots (grated)
Himalayan salt (to taste)
Combine all ingredients (except carrots) in a food processor. Pulse to a rough chop, until ingredients are combined. Add carrots and salt. Pulse until combined.
Serve chilled.
